All of our filled pasta (such as ravioli and cannelloni) is snap frozen to lock in freshness, texture and flavour without the use of preservatives. Snap freezing is a rapid freezing process that freezes pasta very quickly at extremely low temperatures, helping to:

• Preserve texture and flavour

• Prevent large ice crystals from forming

• Maintain freshness naturally

Regular freezing happens more slowly and can affect texture over time. Snap freezing allows our pasta to taste just as good as freshly made when cooked.

For our unfilled pasta, availability may vary between fresh and snap frozen. Please contact us to check current availability.

Cooking times vary by product, but as a general guide:

• Bring a large pot of well-salted water to a rolling boil
• Add pasta and cook for 2–5 minutes until al dente
• Snap-frozen pasta can be cooked straight from frozen

Always follow the cooking instructions on the product packaging for best results.

Storage and shelf life vary by product:

• Fresh pasta: Store in the refrigerator and use by the date listed on the packaging

• Snap-frozen pasta: Keep frozen until ready to cook. It can be stored in the freezer for several months and should be cooked directly from frozen

Yes. Our pasta can be frozen at home if required.
For best results, store it in an airtight container and cook directly from frozen.
